Pinot Blanc begs a delicate hand in the cellar. To minimize contact with bitter skins and stems, and emphasize delicate fruit flavors, RSV pressed whole clusters of grapes brought to the cellar in small lots as each block of vineyard reached the intersection of ripeness and structure.

Abraxas proves that the whole is greater than the sum of its parts. If you hunt for the individual contributions from each grape, they are there: the Riesling presents hints of white nectarine and flowers and Gewurztraminer lends the perfume of its unmistakable exotic spice. Pinot Blanc adds delicate aromas of apples and almonds, while the Pinot Gris provides backbone in the form of texture and refreshing citrus.

We are great admirers of the late harvest wines of Alsace. With this wine, we emulate that tradition by letting the grapes hang long, building ample sugar. We then whole-cluster press the bunches and ferment in stainless steel, leaving 4.86 grams/Liter of sugar.

Just remember that Zinskey late is 16.4% percent alcohol, so please, be forewarned as knowledge is power.
